The Seaview Restaurant also received the
rating of #6 in the world for Best Restaurant and Don has featured as one of
the Caribbean's outstanding chefs in the April 1996 issue of Island Home
magazine.
Returning to Canada in 1996, Don was working as an Executive Chef at Quaaout
Lodge Resort, which is located in the Shuswap Lakes region of British
Columbia. It is a unique, native-owned resort. During his time at Quaaout,
Don and his culinary team garnered a widespread reputation for superlative
cuisine and a truly, memorable dining experience. Also, he initiated a
successful and ongoing apprenticeship program for young chefs, which has
attracted native people from all over western Canada who like to pursue a
career in the field of cooking.
He was offered the position of the first-ever Executive Chef for all food
service at the University of British Columbia in Vancouver after left
Quaaout in 2001. During his 2 years at UBC, Don was in charge of all aspects
of the enormous food service department including their very high-end, high
profile catering department. Don received many accolades for his innovation
menus and beautifully prepared food and had the privilege of serving various
dignitaries and royalty from countries all over the world.
Now, Chef Don is dedicating in the food service in Best Western Abercorn
inn, in charge of all aspects of Food and Beverage Department. His rich
experiences in terms of management and highly culinary skills gained himself
an excellent reputation in Vancouver. Also result in the loyalty of customer
and lower turnover in labour.
